11/24/25 - Sou Matcha's Journey from Farm to Table

In recent years, matcha has taken the world by storm. From lattes in sunny Los Angeles cafés to smoothie bowls in New York, its vibrant green hue and promise of health have captured hearts globally. But at Sou Matcha, we believe matcha is more than a trend — it’s a heritage.

Our matcha begins in Uji, Kyoto, a region long revered as the birthplace of Japan’s highest-quality tea. We source exclusively from the first harvest of the year, known as ichibancha. These spring-picked leaves offer unparalleled levels of umami, nutrients, and gentle aroma, capturing the soul of Japanese tea culture.

But premium leaves are only the beginning. Each batch of SOU NATURE matcha is stone-ground using traditional methods, a process that yields just 40 grams per hour. This painstaking method preserves the tea’s vivid green color, creamy texture, and deep, elegant flavor, which machine grinding can never replicate.

Our leaves come from the hillsides of Kizugawa and Wazuka, two of the most celebrated tea-growing areas in Uji. Thanks to a unique microclimate — morning mists, rich soils, and cool temperatures — these regions produce matcha of exceptional character.

Through direct relationships with local farmers and trusted tea merchants, we ensure that each tin of SOU NATURE matcha is traceable, authentic, and ethically sourced. These connections also reflect our values: sustainability, transparency, and deep respect for tradition.

Whether you are a tea connoisseur, a wellness enthusiast, or simply curious, Sou Matcha's ceremonial-grade matcha is your invitation to experience Japan’s tea culture in its purest, most elevated form.
